Young’s to open new burger concept this month: London pub retailer Young’s is set to open a new burger concept this month. The Burger Shack includes a roving Airstream and permanent outdoor Burger Shacks, each individually designed for the beer gardens of a number of its pubs. The first permanent Burger Shacks will take up residence at two Young’s pubs in south London: The Windmill in Clapham launching on 1 May followed by a second shack at The Bull in Streatham on 26 May. The Burger Shack has been created in response to a demand for more fast-casual dining options that still deliver on quality. The new premium burger brand provides a bold, engaging and attractive food experience that engages with Young’s more urban, modern demographic. Serving from noon until close throughout the summer, the first shack at The Windmill is made from corrugated galvanised iron and is located on the refurbished terrace. A custom-built ‘Shepherds Hut’ accommodates up to 14 with magnificent views over Clapham Common with additional seating available at reclaimed timber sharing tables. Exposed lighting, vintage signage and retro artwork adds to the ‘summer festival meets country village’ vibe. A timber-clad bar will dispense craft beers and sodas. Young’s burgers are one of the brand’s best-selling food items and the Burger Shack will serve a range of signature patties that deliver on taste and provenance. The beef – chosen for its ideal fat content for the juiciest burgers – comes from West Country farms in Devon, Somerset and Dorset, while pork is sourced from Dingley Dell Farm and Essex Freedom Food pigs. Varieties include a beef ‘classic’, a chilli Dingley Dell Farm pulled pork and a vegetarian option; all in a brioche-style bun handmade to an exclusive Young’s recipe by a London artisan baker and served with curly fries. At the weekends, a brunch burger featuring wild boar topped with fried egg, streaky bacon and cheese will also be available. The Burger Shack will also take to the open road with a customised Airstream mobile shack offering the same menu. The mobile Shack will visit various Young’s pubs throughout the busy summer period and will also call at festivals and events throughout the UK including The Franklin Fork to Fork event on 13t June – this fundraiser for Ark Franklin (a local primary school in Kensal Green) will see the Burger Shack popping-up with Wahaca, Polpo, Caravan, Hix Restaurants, Dirty Burger and Soho House amongst others. Later this summer it will be firing up its grills at the Grillstock Bar-BBQ and Music Festival in Walthamstow on 5 and 6 September before parking-up at the Alexander Pope pub in Twickenham for all the Rugby World Cup home games. Patrick Dardis, retail director for Young’s said: “We are extremely proud of our Young’s burger and the new Burger Shacks allow us to extend our food offer significantly whilst providing a more fast-casual quality dining experience. The Windmill and The Bull, with their large terraces, are extremely busy pubs particularly in the summer and the Shacks will allow us to serve our customers better at high capacity periods. The Airstream provides a unique, high visibility option that takes Young’s brand out of the pubs to a new audience.”
