Morning Briefing for pub, restaurant and food wervice operators

Tue 15th Aug 2023 - Propel Tuesday News Briefing

Story of the Day:

Marks – 2023 has seen a stark tail-off unlike any I have ever known, it will take us longer to get to where we want to be: Rekom UK chairman Peter Marks has told Propel that 2023 has seen a “stark tail-off unlike any I have ever known” and “it will take us longer to get to where we want to be”. It comes after a survey by Rekom revealed that more than a third of Brits (34.9%) have reduced the amount of times they go on a night out since last year, blaming factors such as increased general living costs and the need to save any spare disposable income. Marks added: “It’s an underlying problem with the economy rather than a trend. We saw a stark tail-off unlike any I have ever known, a defined drop in trading. People are still going out but going out less. We had already started to expand our bar estate but that was always going to be our focus, we never really had any plans to grow our clubs. 2023 is harder we had hoped but that’s where we all are – we need to be more cautious and it will take us longer to get to where we want to be.” Marks earlier this year said the business, which also operates several nightclub brands, is aiming for an eventual UK estate of 200 sites, consisting of 150 bars and 50 clubs. It will open its second Proud Mary site on 7 September, in Swansea, following its Cardiff debut, which Marks said is trading “extremely well”. It had two more in the pipeline for 2023, which Marks said may “slip into next year”, and which will see the brand cross the border into England for the first time, with a pair of openings in the south. It was also looking to open a third Heidi’s site this year, but a site has “not yet been confirmed”. “We were trying to get both brands into Edinburgh but couldn’t secure it. We will return to that though,” Marks told Propel. “Lots of people are chasing the sites and the prices go up. There’s a lot of former retail sites coming up but you can add a year on for change of use. We have five businesses in Cardiff and we want to replicate that cluster in major cities like Bristol, Nottingham and Birmingham. If we get to 200 in five to ten years it will be through acquiring smaller groups, plus rolling out 10-15 Heidi’s and the same number of Proud Marys, and there’s several other concepts we have in Denmark which can come straight into the UK. We want to build a properly international night time business which shares best practices and best brands.” Marks also said earlier this year that Rekom is looking to add competitive socialising to its portfolio. He added: “That’s probably a year down the line as we’re focusing on rolling out Heidi’s and Proud Mary. We’ll either develop our own or buy one – there’s a couple we like the look of. It would be small, not one of the bigger boys, and something not already catered for. It would be food and beverage-led with an added socialising element rather than the other way round.” Rekom UK will feature in the next Who’s Who of UK Food and Beverage, which will be sent to Premium subscribers next Friday (18 August). It will be the first database where full profiles of 720 of the UK's top food and beverage operators are available in one place. The companies, listed in alphabetical order, will have their most recent results reported as well as broader information around Ebitda, plans and trading style available. The database merges Companies House information, interviews and other public information to provide an easy to reference and exhaustive guide to the sector. Companies can now have an unlimited number of people receive access to Propel Premium for a year for £995 plus VAT – whether they are an operator or a supplier. The single subscription rate is £495 plus VAT for operators and £595 plus VAT for suppliers. Email jo.charity@propelinfo.com to upgrade your subscription.

Zero Carbon Forum partners with BII to support pubs on sustainability journey: Zero Carbon Forum has partnered with the British Institute of Innkeeping (BII) to support pubs on their sustainability journey as part of the BII’s recently launched Sustainability Champion Award. The forum, a non-profit organisation dedicated to helping hospitality and brewing reach net zero at pace, will be providing BII members with access to the carbon calculator and toolkit. It enables hospitality operators and brewers to calculate their carbon footprint and identify achievable key actions to reduce emissions while improving efficiency and sustainability. Mark Chapman, chief executive and founder of the Zero Carbon Forum, said: “The extreme temperatures we’re experiencing highlights the effects of climate change are happening now. Rapid reductions in carbon emissions are critical to maintaining a habitable planet and as food and drink creates more than a third of emissions, our customers and employees expect us to take action. We are delighted to be supporting the BII to help its members measure their climate impact and take immediate action to build more resilient and efficient businesses through accessing the carbon calculator and toolkit.” The Sustainability Champion Award will be presented to pubs and their teams which have demonstrated exceptional leadership, innovation and dedication in implementing sustainable practices.

Italian bakery among first to take advantage of £1 rent scheme in Liverpool: An Italian bakery is among the first businesses to take advantage of a new £1 rent scheme in Liverpool. Luca Sanvittore has moved into one of several premises on Smithdown Road which are being let out for peppercorn rent in an effort to boost the local area. Shop tenants will pay £1 a month in rent for the first three years, with a capped commercial rate for the following two years. There are restrictions of the type of business that can open and they cannot duplicate what is already on offer in the area. Tenants are also required to carry out repairs and refurbishment themselves and must have finance in place. Sanvittore told the BBC: “The vision was to open my Italian bakery and do what I normally experience in Italy. I had the opportunity to be a baker in Liverpool, so when I had the opportunity to apply for one of these shops, I applied.” It follows the Homes for a Pound programme, which launched in 2013 to bring 179 homes in Liverpool back into use.

North west frozen yogurt concept preparing to launch franchise offer, aiming to double size during first year: North west frozen yogurt concept Frurt is preparing to launch its first franchise offer and is aiming to double in size during the first year, Propel has learned. Founded in 2010 by Shaza and Syed Hassan, Frurt offers healthy, gluten-free frozen yoghurts, with vegan and dog-friendly options also available. It offers more than 50 toppings for its frozen yogurt, ranging from fresh fruit to sweets and chocolate. Frurt currently has two full-service stores in Manchester and one in Batley, plus self-service stores in Prestwich, Bolton and Blackburn. “Frurt is a family run business and a real hidden gem,” said franchise consultant Andy Hulbert, of BeeSmart. “It is a well-run business making good money. Its franchise offer is going to market at the end of August. We’re looking at Birmingham and Cheshire first, but we can take it anywhere really. We’re looking to grow it to ten-12 sites in the first year, but I’d be happy with four new sites in the first 12 months. It’s about finding the right partners and the right locations.” Multiple units are available in flexible formats, with stores opening for an investment starting at under £100,000, and a sub two-year return on investment.

Trust Inns acquires three Scottish pubs from Dundas Heritable: Pub company Trust Inns, which is owned by the family interests of the late Trevor Hemmings, has acquired three Scottish pubs from Glasgow hospitality group, Dundas Heritable. Trust Inns has bought The Park Bar in Argyle Street, Glasgow; the Scarecrow in Main Street, Kilsyth; and the Brass Monkey in Argyle Street, Glasgow; in a deal brokered by Christie & Co. Trust Inns managing director Mark Brown said: “We are delighted to add three high-quality sites to our Scottish estate and thank the Dundas and Christie & Co teams for working with us to make this deal happen. We look forward to engaging positively with the excellent existing licensee teams for many years to come.” It comes after Trust Inns last month reported it had exceeded pre-pandemic levels of profitability in the year ending 2 April 2023. It turned a pre-tax profit of £5,606,000 in 2022 into a profit of £8,931,000 during the period. This compares with a profit of £5,584,000 in the year ending 31 March 2020 when only the last few weeks were affected by the pandemic. Turnover rose from £33,895,000 in 2022 to £38,332,000 (2020: £39,636,000). It received no job retention scheme payments (2022: £56,000) and no dividends were paid (2022: nil). Bank loans at 2 April 2023 stood at £20m (2022: £20m) with repayment due in 2026. The five-year banking facility the company entered into in September 2021 was not fully drawn at the end of the financial period.

Bob Bob Ricard team to launch rotisserie chicken concept in ‘new direction’ for business: Restaurant group Bob Bob Ricard has confirmed it is to open a new site in Soho in what is described as “a new direction” for the business as it marks its 15th anniversary. Propel revealed in June that Bob Bob Ricard planned to open a new site under the name BeBe Bob in Golden Square, Soho, in the former Folie site that closed in the spring. The group has now confirmed the concept, which will open in September, specialising in rotisserie chicken, “with well-priced fine wine and champagne to match”. Two varieties of chicken from different regions in France – Vendee and Landes, chosen by group chef director Ben Hobson – will lie at the heart of the menu. The chicken will be cooked rotisserie-style, served whole at the table with a chicken jus and carved in view of guests to feed two. There will also be a handful of “elevated” sides and sauces, including Truffle French fries and sauteed kale. The wine list will feature classic white and red Burgundy, as well as a variety of rosé wine. The venue will have 56 covers in total, including 12 seats at the bar. Leonid Shutov, founder of Bob Bob Ricard and Bébé Bob, said: “To open Bébé Bob during our 15th year is a very special moment. We look forward to welcoming customers to our new single concept dining experience.” The group, known for its fine French and British food, small wine mark-ups and “press for champagne” buttons, currently has two sites in the capital, in Soho and the City. Last August, Bob Bob Ricard secured funds from lender ThinCats to help it expand its presence in the UK as well as abroad. It plans to open more restaurants in the UK as well as exploring potential markets in Japan, including opening a restaurant in Tokyo this year.

Farm Girl launches NFT loyalty scheme: Farm Girl, the London healthy eating cafe concept, has launched its debut collection of non-fungible tokens (NFTs). Comprising 70 unique NFTs, the collection offers an innovative new form of loyalty programme, offering buyers a variety of perks dependent on which level is purchased. These include free coffee every single day, free brunch with queue jump and a year’s supply of rice paper rolls, courtesy of Roll Baby, Farm Girl's sister concept. The digital tokens are available to purchase, without the use of cryptocurrency, via the Farm Girl website. Founders Rose and Ant Hood said the customer loyalty model is “extremely outdated” and they are on a mission to revamp it “by allowing their community to own something intangible that connects them further to the Farm Girl brand”. They added Farm Girl’s first foray into Web3 represents the brand’s “desire to continue to explore additional rewards for its loyal clientele, which could lead to future innovation, utilising blockchain technology, to create unique events and social media sharing”.

North east cocktail bar concept Mother Mercy to open fifth site: North east cocktail bar concept Mother Mercy is to launch its fifth site. Café Mercy will open on Friday, 25 August in Grey Street, Newcastle. We are confident that Café Mercy will quickly become a favourite destination and we can't wait for this exciting new chapter.”

Motor Fuel Group confirms September opening for second Miss Millie’s site with MFG: Miss Millie’s Fried Chicken has confirmed the second site under its fledgling partnership with Motor Fuel Group (MFG) will open next month. Propel revealed last month that a second site under the partnership will open at Langney service station, near Eastbourne. Located within the Esso filling station next to Langney shopping centre, the store will showcase Miss Millie’s new brand, in-store design and menu. The first site under the partnership launched near Wellington, Somerset, earlier this summer, and more stores are planned to open later in 2023. Carl Traill, managing director for Miss Millie’s, said: “Miss Millie’s has been serving awesome chicken in Bristol and the south west for more than 35 years, and we are excited to be bringing the brand to East Sussex for the first time.” MFG’s food service director, Paul Deary, added: “Food to go is becoming a growing attraction to our forecourt customers, and I believe the introduction of Miss Millie’s ‘awesome chicken’ range will prove to be a success.”

Frankie & Benny’s offers free pizza and coke to students celebrating exam results: Frankie & Benny’s, the Italian American restaurant owned by The Restaurant Group, is offering free pizza and coke to students celebrating their A Levels and GCSE results. Guests who show their exam results to a staff member on Thursday, August 17 (A Level results) and Thursday, August 24 (GCSE results), will be entitled to a free margarita pizza (vegan and gluten-free available) and regular coke (regular, Diet or Coke Zero). Additional pizza toppings can be bought from the menu. Frankie & Benny’s marketing director, Andreia Harwood, said: “We recognise the cost-of-living crisis is hard on us all, but we wanted to make sure our hard working students can celebrate their exam results day on us.” It follows Frankie & Benny’s last month announcing two summer meal deals to help families during the cost-of-living crisis, available until the end of August. The first, available Monday to Friday after 7pm, allows guests two main courses of pizza, burgers and or pasta dishes for £20, while the second offers two-for-one main meals all day on Sunday.

Reel to open new Farnham cinema early next year: Independent cinema operator Reel is to set to open its new site in Farnham, Surrey, early next year. The cinema is launching at Brightwells Yard, the new multi-use development in the town centre. The cinema will have six screens, a licensed bar and the Reel Lounge – “a premium viewing experience with plush sofas and armchairs”. Reel Cinemas director Sunil Suri said: “We are delighted we can now start our fit-out works and are excited at the prospect of opening at Brightwells Yard. With our neighbouring restaurants, extensive garden, public artwork and striking architecture, our latest cinema will be at the heart of the community and a real asset for Farnham town centre.” Coppa Club, which is owned by Various Eateries, has already signed to occupy historic Brightwell House and other restaurants are in advanced negotiations.

Neapolitan pizza concept Proove opens fourth site and second in Sheffield: Neapolitan pizza concept Proove has opened its fourth site and second in Sheffield. The company has added to its restaurant in the city in Broomhill, which was its debut outlet when it launched in 2015, with an opening at Orchard Square shopping centre. It offers Proove’s standard menu of pizza alongside a range of desserts, as well as a drinks list including a selection of cocktails, reports by The Star. The concept was launched by Deepak Jaiswal and Rob Engledow after returning from a trip to Naples “determined to bring a slice of authentic Italian-style dining to South Yorkshire”.

Bristol operators set to open fourth site and second under concept ‘inspired by diversity of India’: Bristol operators Raja Munuswamy and Arvind Pawar are set to open their fourth site and second under a concept “inspired by diversity of India and its 29 states”. The duo are set to open their second Nutmeg site at the former Hoba kebab house site at 23-25 St Augustine’s Parade, which also used to be a Pizza Hut restaurant. It will add to the duo’s original Nutmeg location, at The Mall in Clifton Village, plus Nadu in Stokes Croft and Kal Dosa in Gloucester Road, which they also operate. Munuswamy and Pawar met while working together in restaurants in Bristol and opened their first Nutmeg site in 2016, reports Bristol 24/7. Sri Lankan concept Nadu followed in 2020, and Kal Dosa, which brings “the tropical taste of south India to Bristol”, opened two months ago.

Essex operator to open immersive Greek restaurant in Brentwood for third site: Essex operator Burak Erceli, who is behind the Fat Turk concept, is to open an immersive Greek restaurant in Brentwood. Erceli will launch Yiamas in the suburb of Pilgrims Hatch in the former Dusk restaurant premises. Erceli has been granted a licence by Brentwood Council for the venue. He told Essex Live: “People want to go and dine and be entertained – that is what the rear part of the restaurant will offer. We’ll have people spinning from the ceiling, there may be someone who does stuff with fire – it's all about entertainment. There will also be some great singers.” Erceli operates Fat Turk restaurants in Brentwood and Ongar.

Korean fast food concept opens third site: Korean fast food concept The Bap has opened its third site, in Reading. It has opened in the town’s Market Place, joining its other sites in Farnborough and Swindon, offering “authentic Korean cuisine”. Owner, DJ Kim, who was born in South Korea, said all the dishes on the menu are inspired by recipes learned from his mother while growing up. “We have wanted to open in Reading since I opened four years ago but I just couldn’t find the perfect location, so it is exciting that we are finally here,” he told the Reading Chronicle. “We are different from a lot of other Korean restaurants because rather than having to sit down for a meal, you can pick up something in a couple of minutes. We are Korean fast food. Everything is made fresh in our open kitchen and we offer specialty sauces in every level of spice.”

Glasgow Spanish concept to open third site in city: Glasgow Spanish concept Malaga Tapas is set to open a third site in the city. The restaurant, which won the Spanish Restaurant of the Year trophy at the Scottish Restaurant Awards 2023 last month, has existing locations in Pollokshields and Clarkston. It has now confirmed it will be shortly opening a third location, in Bearsden. Sharing the news on Instagram, the business said: “We are so pleased to announce that we will be opening in Bearsden in the coming weeks. Thank you all for your kind words and excitement around our third restaurant opening.” Malaga Tapas, which started trading in 2011, is owned by Seville-born former IT consultant Guillermo de la Orden, who came to Scotland at the age of 25. He always had an interest in cooking and started working as a chef at Ola in East Kilbridge, helping double its income in seven months, before branching out on his own. “Malaga Tapas is a name known only to our customers, but in the future, I hope to develop it into a brand producing food produce available in various retail outlets,” he told The Herald. “I'm always thinking about how to develop the business in new directions.”

Operator behind ‘best independent bar in Scotland’ set to open third site: The operator behind The Smoking Goat in Ayr, voted Scotland’s Best Independent Bar at last year’s Scottish Entertainment Awards, is set to open a third site. David Storrie, who also owns The Bistro in Ayr, will open a new bar and restaurant within the Kylestrome Hotel in the town. It follows property firm Donnini Apartments taking on the hotel and its facilities from previous owners, Andrew Syme and wife Diane. Donnini’s Jake Murray and Laurence Maylon had previously been working in partnership with the Symes to operate the 12 guest rooms at the hotel, but have now completed a full takeover. “The Kylestrome Hotel has been a key part of Ayr’s hospitality landscape for many years and we could not be more pleased to welcome the new food and beverage management team,” the duo said. “Work is well underway to rebrand the new restaurant and the new name and menu will be announced very soon.” Storrie added: “It’s a privilege to be part of the thriving hospitality scene in Ayr, and I’m delighted with the success of The Bistro in its first few months. The menu at the new restaurant will offer a fusion of upmarket bistro dishes with great, unfussy seafood and steak options. We are fortunate in Ayrshire to have many great local suppliers, and this will be reflected in the menu.”

Chesterfield fish and chip shop opens second site: Chesterfield fish and chip shop Chesters has opened its second site. The new venue is at the Markham Vale services at junction 29A of the M1. It adds to the business’ premises in Sheffield Road, Chesterfield. Owner Chris Ioannides told the Derbyshire Times: “It took a lot longer than we anticipated, due to unforeseen problems – covid being one – and our bad luck seemed to roll from one thing to another. It was worrying times, especially in our trade. With the price of fish, oil and everything else, it has really tested us. At one point with the price of gas and electricity, if we’d have opened we probably would have gone bust very quickly. When the price did finally come down, energy companies refused to actually supply us, as they weren’t supplying new hospitality businesses. After a real battle to get the doors open, we’ve finally done it.” The new restaurant has created 20 jobs, with Ioannides using the period where he was resolving the energy supply issues to bring in staff and train them at the Sheffield Road branch.

Team behind Birmingham nightclub set to launch café: The team behind Birmingham nightclub Lab11 is set to launch a new café in the city, Café Lovelife. The team has converted a former works garage in Floodgate Street into its first venture into food, opening in September, offering a Mediterranean-inspired menu including mezzes and cocktails. Cafe directors Will Power and Damien Dixon said: “This is the first of our food-led offerings to be announced. We have been looking forward to working on new projects in the hospitality sector and this felt like a natural step forward. After being established operators within Digbeth over the last 15 years, we have an affinity with the area. We felt the project was well suited to Floodgate Street and the general evolution of the area, its visitors and residents. There is no kitchen door, it keeps us honest. You will see our ingredients, suppliers, team, chefs, and pride on show. All our food is cooked and prepared fresh on site. Think mezze, grill, grains, salads, bowls, the best breakfasts in Digbeth plus fresh bread, cake and pastries from our partner bakers.”

Hertfordshire operators set to open second site: Hertfordshire operators Neill and Jacqui Burton are set to open their second site. The Burtons opened small plates, cocktail and fine wine concept Chez Burton in Baldock’s High Street in August 2021. They are now set to open a cocktail and wine bar called The Waiting Room by Chez Burton in the former La Concha tapas restaurant at Letchworth train station. The new site will serve food, but not to the extent of the Baldock restaurant, due to the size of the kitchen. The duo told the Comet: “We always wanted this Letchworth site but it wasn’t available. We had had many great evenings in the old tapas place and loved the history of this building. We opened Chez Burton just after lockdown and ploughed our energy into this one, thinking that the Letchworth location just wasn’t to be. When it fell derelict, we approached Network Rail, which owns the building, and asked if we could take it over. It was never our intention to have multiple locations as we still work full-time jobs in cyber security, but we just couldn’t resist taking the opportunity with the place that first triggered our dream of owning our own bar/restaurant.”

Birmingham coffee shop closes one of its sites: Birmingham coffee shop Quarter Horse has closed one of its sites, blaming “soaring costs and a massive downturn in trade”. But the owners, husband-and-wife team, Nathan and Ameeta Retzer, said they were exploring opportunities to reopen the cafe in some capacity, whether in Bristol Street or as a pop-up. Quarter Horse's roastery and Kenyon Street espresso bar, in the Jewellery Quarter, will continue trading as normal. In a statement on its Instagram page, Quarter Horse said: “It's with regret and very heavy hearts that we are stopping trading at our Bristol Street coffee shop. We have not taken this lightly and have waited for as long as we could. However, for many reasons including soaring costs and a massive downturn in trade due to the persistent economic climate, here we are. Going forward, we're exploring alternative opportunities to reopen a café in some capacity, either returning to Bristol Street or as a pop-up in the near future. We are fortunate that our roastery and Kenyon Street espresso bar will continue trading as usual.”

Halifax Italian restaurant owners set to open second site: The team behind Halifax Italian restaurant 2Amici is set to open a second site for the concept. 2Amici, led by general manager Andrea Bebo, operates from 22 Broad Carr Lane in Holywell Green, Halifax. The owners have now acquired the former The Tannery site in Halifax Road, Hipperholme, for a second location. “Get ready for an authentic Italian culinary experience filled with fresh ingredients, handcrafted dishes and flavours that transport you to Italy,” it said on Facebook. “Join us as we bring the beloved taste of Italy to Hipperholme.”

Liverpool healthy eating restaurant to open second site: Liverpool healthy eating restaurant Picnic is to open a second site in the city. The concept launched its debut site in Smithdown Road in 2019 after starting as an online business. Now a second venue is opening in the suburb of West Derby, in Almonds Green. A Picnic spokesperson told Liverpool World: “Our target with this new venture is to re-create what we fell in love with at our Smithdown store; a neighbourhood establishment that provides healthier fast food to sit in, take away and be delivered. We are aware Smithdown is working at maximum capacity at peak times so our target is to increase availability on delivery and takeaway and reduce current wait times by 30%-40%, as the sites are situated close enough to share the demand.”
