Sir Tim Martin – scope to eventually grow JD Wetherspoon to 1,200 sites with addition of franchising, ‘still a place for small high street pubs’: JD Wetherspoon chair Sir Tim Martin has told Propel he believes the addition of franchise sites to the estate means there is now scope to eventually grow the 794-strong business to 1,200 pubs. Sir Tim has previously said the optimum size of the company would be 1,000 pubs. But as Wetherspoon gears up to accelerate its franchise growth, with around 15 franchised pubs set to open in the next financial year, he has revised that target. In May, Wetherspoon opened its first high street franchise pub, partnering with Thompson Holdings to launch The Conister Arms in Douglas on the Isle of Man. The first Wetherspoon franchised pub opened in January 2022, in Hull University’s students’ union, followed by a second, at Newcastle University, in September 2023. Wetherspoon has been stepping up its franchise operations in the past year, having now opened five pubs in partnership with holiday park operator Haven, and is also targeting hotels for its pubs. Speaking following the company’s full-year trading update, where Wetherspoon reported like-for-like sales increase by 5.1% in the 12 weeks to 20 July 2025 and sales volumes have overtaken pre-pandemic levels, Sir Tim said: “The franchise sites are performing very well so far. Franchisees are reporting big increases in trade following conversion to Wetherspoon – often doubling the trade of the previous licensed premises, where that was the case. I can’t reveal exact locations of the new franchise openings yet, but we’ve already opened at two universities, several holiday parks and the Isle of Man, so that gives an indication of the plan. We think we could have 1,100 or 1,200 sites now, including franchises.” This week, Scottish brewer and retailer BrewDog shut ten of its smaller sites while Wetherspoon has been opening bigger pubs. However, Sir Tim said there is still a place for small high street pubs, despite the growing challenge to make them viable. He added: “Some of our smaller pubs, such as Tooting, Brixton, Manchester Piccadilly and Leeds station, are doing very well.” As fears grow that taxes will have to rise again in the Budget, Sir Tim is hopeful lobbying by the industry, led by UKHospitality’s #Taxedout campaign, will make the government think again. “It will have to,” he said. “The trade is genuinely taxed out, and the tax inequality with supermarkets is massive and is creating economic distortions and is decimating high streets.”

A COREcruitment spokesperson said: “The role will oversee the day-to-day operation of a retail-led catering operation centred in London but with a national remit. There is a team of centre managers reporting in and an overall team of circa 70. The operations director must have experience in a retail setting in a senior capacity, while experience within contract catering would be a bonus. There will be a requirement for some travel, but as the main centre of operations is in London, this will be the base. Stakeholder management will play a key part, so not only will the operations director be experienced in managing and leading teams, but their history of client relationships will be key. Sim Trava acquires QFM Group’s 21-strong portfolio of Costa stores: Sim Trava, which operates circa 60 Costa Coffee sites across the north west, has acquired the 21-strong Costa estate of franchise operator QFM Group. The sale marks a significant milestone for QFM Group and follows a 17-year association with the Costa Coffee brand. Kishan Patel, director of QFM Group, said: “This was a significant and emotional decision for our family.” Founded in Sheffield in 1982, QFM Group is one of the UK’s leading franchise businesses, operating more than 120 units across its three key brands of KFC, Costa Coffee and Taco Bell. This includes circa 50 KFC restaurants and circa 30 Taco Bells. Latest accounts just published for QFM Group show turnover increased to £141,047,211 for the 15 months ending 29 December 2024 compared with £109,606,037 in the previous 12 months. Ebitda grew to £8.3m from £2.6m the 12 months before. Pre-tax losses narrowed to £3,969,199 from £7,134,121. Founded by husband-and-wife Simon and Tracy Vardy in 2004, Sim Trava has grown its Costa estate, having opened its debut site in Northwich in October 2005. In 2013, the Vardys launched Canadian health food brand Pita Pit in the UK with an opening in Manchester. In 2016, the company launched the Sim Trava Academy as a learning and development arm, and the following year, it partnered with Warrens Bakery for an opening in Altrincham. Latest available accounts show Sim Trava saw turnover grow 11.2% to £25,931,509 for the year ending 31 December 2023 compared with £23,322,311 the previous year. Ebitda grew 34.8% from £1,424,000 to £1,919,000. Although the company swung back to an operating profit of £67,225 after making a loss of £159,477 in 2022, pre-tax losses widened from £689,306 to £868,120. Freeths acted on the deal.
 
Lee Reed to step down as managing director of Stonegate’s tenanted and leased division: Lee Reed is to step down as managing director of Publican Partners – Stonegate Group’s circa 3,100-strong tenanted and leased division – after 16 months in the role to “pursue other opportunities”. Reed joined Stonegate last April from Papa John’s, where he was senior operations director UK and international. Prior to this, he spent nearly a decade at KFC in a variety of roles, including director of franchise operations, and began his career with M&S. Talking to Propel last April about Reed’s appointment, Stonegate chief executive David McDowall said: “Lee, who with Yum! Brands and Papa John’s, has great franchise and partnership experience, and that just felt like a very natural thing to do to help us amplify 3,000 partnerships with great publicans all over the UK.” Reed is being replaced by Dan Castle, who has been at Stonegate for more than a decade, most recently as an operations director for the past four years. He previously spent four and half years at Greene King. McDowall said: “I would like to congratulate Dan on his appointment, which highlights our commitment to career progression and the development of our own talent. I’d also like to thank Lee for his contribution to the company and wish him every success in the future.”
 
Punch and Loungers owner weighs up takeover of Malmaison and Hotel du Vin: The owner of Punch and café-bar operator Loungers is weighing a takeover of Malmaison and Hotel du Vin. Fortress Investment Group is among the parties considering offers for Malmaison and Hotel du Vin, which sit under the same ownership structure, reports Sky News. Cushman & Wakefield is handling the auction. The Malmaison and Hotel du Vin group trades from 37 hotels in 27 UK cities, with the portfolio split almost equally between the two brands. They have been through a succession of owners over the last 20 years, including the private equity firm KSL Capital Partners. They are now owned by Singapore-based Frasers Hospitality Group, which reportedly paid more than £360m to acquire the group in 2015. A number of other bidders are also said to be participating in the auction, although the current valuation attached to the Malmaison and Hotel du Vin business was unclear. Fortress has bought a number of businesses in recent years, including Majestic Wine. Earlier this year, the investment firm bought Loungers for about £350m. Fortress declined to comment, while Cushman & Wakefield has been contacted for comment.

Doner Shack signs agreement to launch in Tennessee: Doner Shack, the Berlin fast casual kebab brand, has signed a franchise agreement to launch in Tennessee, which it said marked the first step in its strategic southern US expansion. The group said the agreement is part of a broader regional rollout and Tennessee was the first market awarded, following a competitive process involving numerous inquiries and offers from qualified area developers. Doner Shack ultimately selected Helen28, a franchise group, led by experienced entrepreneur Mohamed Hamoud, known for building and operating successful multi-unit brands across the south east. Jason Steele, founder and chief executive of Steele Advisory Group and head of Doner Shack’s US expansion, said: “Helen28’s vast experience, especially in high-traffic roadside and quick service restaurant environments, made it the clear choice to lead our Tennessee growth.” Hamoud owns and operates a broad portfolio of franchise and hospitality businesses across multiple states, including Dunkin’ Donuts, Buffalo Wild Wings Go and Your Pie. “Over the decades, we have seen hundreds of concepts,” said Hamoud. “Doner Shack stands out for its operational efficiency, menu innovation, and clear customer appeal. Tennessee is a great fit, and we’re excited to be the first to bring it to market.” Doner Shack plans to develop multiple locations across Tennessee, with early site mapping already underway. The team is prioritising drive-thru–friendly locations and roadside hubs that complement Helen28’s existing network of gas stations and travel centres. Earlier this week, Propel reported Sanj Sanghera, co-founder of Doner Shack, had said the company had signed more franchise deals “that will now see us operating in 14 US states, with 12 to 15 new restaurants expected to open by the second quarter of 2026”. The brand, which operates three sites in the UK, signed its first three franchisees in the US – in Florida, Las Vegas and Dallas – in the spring, and said it was on track to award more than 50 new franchise agreements this year across North America. Earlier this month, the company secured its first site in India.

Caprinos to open in Bournemouth today: Fast-growing pizza brand Caprinos will open in Bournemouth today (Thursday, 24 July). It will open at 2a Lansdowne Crescent in the town, marking Caprinos’ 111th store in total, including handful overseas in Pakistan and Ireland. Caprinos’ menu, which is fully halal, also includes sides, loaded fries, wraps, salads, desserts and milkshakes. Gul Nawaz and Khalil Rehman, co-founders of Caprinos, said: “With our local franchisee, we can’t wait to introduce Caprinos to local consumers and are confident it will soon become the go-to spot for pizza lovers in Bournemouth.” The Bournemouth launch will be followed by new stores in Sheffield, Leeds, Rochester and Birkenhead, and then Kentish Town and Enfield in London, as Caprinos builds towards a target of 120 sites by the end of 2025. It follows openings in Cambridge, Watford and Kettering in the last few months. Last week, Rehman told Propel the business, which sponsors Oxford United FC and Northamptonshire CCC, is in talks for further sports club sponsorship deals as they contributed to 14% like-for-like first half growth for the brand this year. Rehman has previously said he is aiming to grow Caprinos to 200 locations by 2030 and that the business will launch in the Middle East this year.

Heavenly Desserts opens in Bedford, lining up London and Essex launches next: Artisan dessert restaurant Heavenly Desserts has opened in Bedford and is lining up launches in London and Essex next. The company has opened at 25-27 High Street in Bedford through new franchisees, the Sunda family. “Next up Basildon and London Wembley,” the company posted to social media. The Basildon site will be in a vacant unit next to US brand Slim Chickens in the Festival Leisure Park. Slim Chickens operates in one half of a building that used to be a Firecrackers restaurant, with Heavenly Desserts taking the other half. The brand currently has circa 60 UK locations, plus a single overseas site in Canada, and is set to add ten more UK locations this year. In April, global operations manager Wesley Williams told Propel the business is to kick-start its international expansion this year with openings in Canada, Germany, Pakistan and India. In June, Heavenly Desserts signed a 50-plus store development deal for India, partnering with Bhatia Group for a roll out that will include flagship and franchise outlets across 20-plus Indian cities, starting with Delhi.
 
The Fat Pizza opens in Derby: Fast-growing pizza franchise The Fat Pizza has opened in Derby as it continues to expand across the UK. The business, which was founded by Sunny Chhina in 2017 and began franchising in 2021, has opened at 709 London Road in the city. Chhina, who previously told Propel he is aiming to grow to 180 UK locations over the next few years, said: “Summer is going to be busy. We have new openings lined up weekly for a while. Another big step forward for The Fat Pizza as we open our newest store in Derby – bringing bold flavours, unbeatable deals and our signature cheeky energy to a new city. Every new store is a reflection of the hard work and dedication behind the scenes, and we’re proud to see it all come together once again. From four stores in 2020 to more than 40 across the UK and beyond – we’re growing fast, and we’re just getting started.” The Fat Pizza made its international debut in December, in Sharjah, and Chhina said he is aiming for 50 sites in the GCC region over the next three years.
 
Mission Mars to open Rudy’s in Bristol next week for south west debut: Mission Mars, which is backed by the Business Growth Fund, will open a site for Rudy’s Pizza Napoletana in Bristol on Monday (28 July) – marking the brand’s debut in the south west. Propel revealed in March that Mission Mars planned to open a Rudy’s in the former Royal Bank of Scotland site in Baldwin Street. The 3,000 square-foot venue will accommodate more than 120 guests indoors, while an outdoor seating area will have 35 additional covers. The restaurant will mark the brand’s 34th opening across the UK. Neal Bates, managing director of Rudy’s, said: “As one of the UK’s most welcoming and food loving cities, Bristol is the perfect next stop for Rudy’s.” In May, Mission Mars said it had ten more Rudy’s opening or in legals, with further sites for its Albert’s Schloss concept also under negotiation.
 
Greene King reports sharp rise in spritz sales as summer drinks sparkle: Brewer and retailer Greene King has reported a sharp rise in spritz sales as they accounted for nearly half of the cocktails sold in the past month. Spritz serves made up 45% of cocktail volume, up 12% compared with the same period last year (16 June-14 July). Aperol Spritz continues to lead the category, accounting for 21% of cocktail sales overall and 58% of spritzes. Hugo Spritz has seen a significant rise, with more than 300% growth year-on-year. Sales of Pimm's are high, with Pimm's by the glass up by more than 100% and sharing jugs of Pimm's up by more than 50%. Across Greene King managed pubs, sales of rosé wine have continued to rise. The company is seeing growth in its Provence rosé sales in particular, as it said customers choose to trade up for more premium quality. The appetite for iced beverages, such as coffee, is also on the rise. Over the four weeks, iced drinks have accounted for 16% of total beverage volume in Hungry Horse pubs. Iced coffee alone is up 125% year-on-year, with caramel emerging as the most popular flavour. The limited-edition summer milkshake range has also landed strongly, contributing 7.7% of total beverage volume and helping to drive average spend per head across the estate.

Hotel owner and management company acquires Cheltenham hotel for eighth site: Hotel owner and management company KE Hotels has acquired The Queens Hotel in Cheltenham for its fifth owned property in the UK and eighth overall – five owned and three managed. The 84-bedroom The Queens Hotel is a grade II-listed building occupying a prominent one-acre site adjacent to Imperial Gardens in the heart of the town. Anil Khanna, managing director of KE Hotels, said: “This is an exciting time for KE Hotels as we continue to build momentum in our growth strategy. The addition of The Queens Hotel Cheltenham not only strengthens our owned portfolio but also reflects our long-term vision of acquiring and managing distinctive properties in strategic UK destinations.” The acquisition follows a series of recent milestones for KE Hotels, including the additions of Hotel Indigo Newcastle and Holiday Inn Luton airport in 2023. In 2024, KE Hotels also assumed management of three Hampton by Hilton hotels, in Newcastle, Birmingham and Sheffield. Its owned portfolio also includes Moxy Manchester   and Linton Lodge Oxford. In addition to its UK portfolio, KE Hotels owns and operates a collection of eight hotels in California. 

Former McDonald’s UK vice-president of operations expands his franchise business: Former McDonald’s UK vice-president of operations Jon Betts has expanded his franchise business with the brand. Betts joined McDonald’s as a crew member in 1990 and spent 32 years with the business in various roles before becoming a franchisee in 2022. Betts was promoted to operations manager in 2010 and director of operations for the brand’s southern company-owned stores in 2013. In 2016, he was again promoted to vice-president operations south, where he had responsibility for all McDonald’s restaurants in the southern region, including franchised operations. His franchise business, JPB Restaurants, has just acquired its seventh restaurant, in East Ham, east London.

Nell’s Pizza to open at MediaCity, with first site to feature karaoke and shuffleboards: New York-style pizza business Nell’s is to open a fifth site in the north west, in MediaCity, Salford. Opening this autumn, the site, located at MediaCity’s quayside Orange Building, will be the first Nell’s to feature private karaoke booths, shuffleboard tables and a massive outdoor terrace, all alongside the brand’s signature 22-inch New York-style pizza, ice cream sandwiches and frozen margaritas. “We’ve been thinking about MediaCity for a long time, it’s such a great area and we’ve seen what brilliant operators like Kargo have achieved, so when this space came up, we jumped on it,” said Jonny Heyes, co-founder of Nell’s. “The venue is huge, which has given us the chance to really play with the experience. This idea of karaoke and shuffleboard accompanying our made-for-sharing pizza and great cocktails feels like a natural next step for us.” Nell’s currently operates sites in the Northern Quarter, Kampus and Chorlton in Manchester, along with a restaurant in Altrincham.

Maray to open in Chester: North west Middle Eastern-inspired restaurant and cocktail bar concept Maray is to open a fourth site, in Chester, this winter. Maray is a part of QVO Hospitality, a group of restaurants and bars across the region that also comprises Buyers Club, a neighbourhood bar and pizza and pasta kitchen in Liverpool, and The One O’Clock Gun, an independent pub at the Royal Albert Dock in the city. The new site in Chester’s Northgate scheme will join the original Maray site, which opened in Liverpool’s Bold Street in 2014, its second site at the Royal Albert Dock in 2019, and third in Manchester city centre in 2022. Co-founder and managing director James Bates said: “We’re thrilled to be bringing our fourth Maray site, to Chester. It’s a city I have previously worked in and long admired, and we feel it shares a lot of the same spirit and character that made us fall in love with our first site in Bold Street.” Tom White, co-founder and brand director, said: “We’ve worked closely with Cheshire West and Chester Council to find this lovely building. It’s a really spacious site and we’ve got a surprise or two up our sleeves to bring something fresh and new to the people of Chester.”

Freemans Event Partners renews multi-year contract with Silverstone: Freemans Event Partners and Silverstone have signed a new multi-year contract, reaffirming a 40-year partnership. Recently, Freemans Event Partners delivered a record-breaking Formula 1 British Grand Prix working with Silverstone, where more than 500,000 fans were welcomed across the event. Under the renewed agreement, Freemans Event Partners remains the exclusive public food and beverage provider at Silverstone. Matt Luscombe, chief executive of Freemans Event Partners, said: “We are delighted to be extending our longstanding relationship with Silverstone. Our collaboration over the decades has consistently pushed boundaries in terms of quality and innovation, and this renewed agreement means we can continue to support the venue's continued evolution as a world-class, multi-use destination.”

Midlands smash burger business Brgr Lab set to open in Leamington Spa: Midlands smash burger business Brgr Lab is set to open in Leamington Spa. It will open in The Parade in the Warwickshire town, showcasing the brand’s new store design. Franchisee Zeeshan Ahmad said: “Leamington Spa is the perfect location for the next chapter of Brgr Lab. It’s a town full of energy, diversity, and a strong food culture – I’m excited to be bringing something new and exciting to the community. The new store design will really reflect what Brgr Lab is all about: fast, fresh, and full of flavour – all in a space people will want to hang out in. We’re not just opening another restaurant – we’re showcasing the next generation of Brgr Lab. It’s an experience people will remember the moment they walk in.” The business, launched by brothers Hamzah and Hassan Islam in 2020, currently has UK locations in Coventry and Leicester, and earlier this year signed a multi-unit franchise agreement to take the brand to Qatar. In May, the founders told Propel that Brgr Lab is set to make its London debut this year as it targets 28 sites by 2028, and is in the final stages of securing its first international location. “We have an exciting pipeline of new openings scheduled for 2025,” they said. “A major highlight will be our first flagship London store, opening later this year in Ilford – a 60-seater full-service restaurant. In total, we have five new UK stores planned for 2025: two in London, two in the north and one in Glasgow.”
 
Manchester Detroit pizza business opens third site, preparing for ‘serious growth’: Manchester Detroit pizza business Dough Club has opened its third site, as it gears up for “serious growth”. The restaurant has opened at 403 Oxford Road, joining its locations in Withington and Cheadle Hulme. Founder Samir Makin also owns gourmet burger brand Shankedown, which has locations in Withington, Wythenshawe, Cheadle Hulme, Edinburgh and Newcastle. “Our latest Dough Club site landed right in Manchester’s university corridor, and it’s already proving to be our busiest yet,” Makin said. “Surrounded by students and constant footfall, it’s the perfect home for our slice-first, grab-and-go model. This location has confirmed something we’ve believed from day one – there’s a real gap in the market for fast, fresh, independent pizza done properly. Next up, we’re working on a kiosk concept designed for shopping centres and high-traffic zones. If Oxford Road is any indication, this could be the blueprint for serious growth. Big things ahead.” The business originally launched last year as a hole-in-the-wall concept in Manchester’s Queen Street.
 
US indoor water park business Great Wolf Resorts moves forward with plans for Derbyshire site: US indoor water park business Great Wolf Resorts has moved forward with plans for a proposed site in Derbyshire. The business, which was founded in 1997 by brothers Jack and Andrew Waterman, and which operates 23 resorts in the US, first unveiled plans in May for a family-oriented waterpark resort to be sited on land off the A619/Gapsick Lane junction, on the outskirts of Clowne. The company, which has planning permission to build a UK resort near Bicester and is looking to develop a site in Basingstoke, has now lodged an EIA scoping opinion request report, ahead of submitting a full planning application for the project. The site covers a total area of approximately 47.6 acres, and it is estimated that the scheme would support create 500 jobs upon completion. As previously reported, the plans include a 500-plus-bedroom hotel, an indoor water park, conference facilities, “dry” leisure offerings and a selection of restaurants, cafés and bars.
 
Isle of Wight café concept set to open third site: Isle of Wight café concept PO41 Coffee House is set to open a third site. The business, which also has premises in Cowes and Yarmouth, is bringing a new branch to the entrance of Ryde Pier and the train station. The coffee shop is due to open on Thursday, 31 July. Owned by Louise Collins, PO41 Coffee House was founded in 2014 and takes its name from the postcode of its original site in Yarmouth.
 
Independent craft beer bar and bottle shop concept backed by ex-international cricketers lines up second site: Vinny & Ted, an independent craft beer bar and bottle shop concept backed by ex-international cricketers Angus Fraser and Tim Murtagh, is set to open its second site, in Buckinghamshire. The business launched in 2022, taking over the former NatWest building in Chalfont St Peter. Vinny & Ted will now open a second site tomorrow (Friday, 25 July), in Wycombe End in Old Town, Beaconsfield. The business is led by Matt Pryce, who is also known as “Vinny”, and his dog Ted is the namesake of the business. The company describes its concept as an “independent craft beer bar and bottle shop” where it stocks a “selection of wine and locally sourced spirits”. Murtagh, a former Middlesex four-day team captain and ex-Ireland international, and Fraser, an ex-England international, are both investors in the business.
